1962 356B rear axle hubs/bearing getting hot

I've recently replaced the rear bearings, shoes, cylinders and even skimmed drums 1mm following the workshop manual to the letter. After around 10 miles of driving with not too much brakes I take an infrared temp reading of the centre of the wheel and find 24C one side and up to 75C on the other. One rear drum is really hot to touch. I've had the car now 16 months and not been out in it yet which is getting a bit frustrating.

Does anyone have any guidance please? Have I done something really dumb? Or is this normal for brand new brakes? Nothing appears to be binding.

I wonder if i have put too many 0.1mm shims in?

I assume you have got the slave cylinders and the shoes and adjusting nuts (star wheel adjusters) the correct way round?
I would back off the shoes on the hot side and do another test drive to check if it is the brake shoes that are rubbing.
Why did you need to have the very expensive brake drums skimmed?
They can become oval if when very hot when you park and have put the handbrake hard on. They can become oval as they cool down giving rise to braking judder.
