Craig don't heitate to go for the shiny Targa hoop look. In case you don't know the roll bar is covered by a thin aluminium shroud or hoop. If you just clean off the paint and leave the metal bare then you will have to constantly polish and protect it . A good wax every month would probably do it. The problem with this approach is that the areas you can't polish without removing the hoop will be subject to nature's call.
My bar is a custom black satin finish (a tad of satin added to the original colour) just use a good clear laquer in your case. Unless you have a large oven you won't be able to do this yourself as the paint needs to bake on for toughness and longevity. Find a reputable body shop and to save money do the disassembly and reassembly yourself. The place Iused charged £100.00 , the problem painting the bar is it needs to be 'etched' and this can be problematic for some paint shops it would seem.
The bar is held on at the point where it joins the body inside the wing by two bolts and washers either side and also by a row of smaller screws aroundthe fronttop of the bar. You will need to remove and replace the Targa hoop front and rear seals, take pics with a camera so you put things back exactly as you removed them. If the seals and hardware have seen better days replace them for a refreshed look and extra weather protection. Coat the seals in vaseline , this makes them expand and protects them too. Two pairs of hands are better than one for this job as it is easy to scratch the bar or your car's body, ask me how I know!
