Recommendations for engine tuning

I’d be interested to know what you hope to achieve by this. Unlike a carburetted engine, really there’s nothing that can be done to “tune” your engine other than to remap the engine’s ECU [DME in Porsche-speak], and there are specialists who can do this, some with dyno facilities. Since it’s not a turbocharged engine the power and torque gains will be small, although the driveability will be improved. Improvements to the induction and exhaust systems will give additional gains if you’re looking to further modify the engine.
Running your car on a dyno will of course give you an idea how close its power and torque figures are to the original spec. If there’s a significant variation then further investigation into possible causes would be appropriate.

The car has undergone restoration of all but the internals of the engine, including custom exhaust etc. So I'm really just checking progress
Porsche used to offer a retrofit performance kit for the 996. It consisted of new cylinder heads, exhaust and inlet manifolds, camshafts, oil pump, sump, and loads of other bits and pieces. I can't remember the cost, but I recall it was somewhere in the region of £10,000. It raised the output of the 3.4 from 295 to 320PS.
It may be better to spend it on the chassis for improved handling and road holding. This will likely produce a far more satisfactory result in terms of overall vehicle performance.
I would start initially with a specialist bespoke geo report and setup, then seek advice on potential upgrades.
