Below is a link to a document which I have came across which provides very useful information to rescue services - but which you're most likely to be asked for if taking your Taycan on a Track Day.
Some key points:
1. The high voltage system is deactivated if the airbags or seat tensioners are triggered. This is particularly reassuring and is unique to the Taycan.
2. The high voltage system can be deactivated manually from within the boot or the frunk.
3. There is no risk of voltage ever being applied to the bodywork.
4. The car cannot be towed with the wheels touching the ground under any circumstances.
5. In case of fire, use water only to either cool the battery or extinguish the fire.
Taycan Rescue Sheet
(Full disclosure, I found this in the very handy "Taycan Owners UK" Facebook group, link to original post here. The poster is probably one of the most prolific Taycan Track day-ers, so if you've questions I'd definitely head over there!).
